I am completely new to the game and have two questions.
There's like 6 different games of Guild Wars. All I want to do is pvp so if I want to do everything in pvp, what do I need to buy?
Also, where do I go to test out all of the abilities on my own?

there are 3 chapters and one expansion of guild wars (not guildwars2). There are a few different packages that you can get them in though. There is a pvp only edition: https://wiki.guildwars.com/wiki/Guild_Wars_PvP_Edition
and check out the wiki as well--it has some information about classes and such.
Whichever product you buy (with the exception of eye of the north which is only an expansion) you will have a few character slots so you can play around with different characters and with pvp you can quickly change to a new max level character.

I'd recommend purchasing Guild Wars Trilogy along with Eye of the North, that'll grant you the access to all of the existing content along with the possibility to make use of any desired PvP setups. And what's no less important, it'll give you the access to Kamadan, which is the central and only currently-active marketplace where you can trade goods with the others.
