Are there helms in post that double a skill like the ones Nicholas offers for 50 red iris flowers? Wondering if I should buy extra helms before leaving pre. Thanks.

No, there is higher armor rating armor and +1 helms for every attribute in post searing ascalon

If you just put in a new insignia/rune, there is not risk of destroying the item - but you lose the previous rune/insignia. There are Perfect Salvage Kits for removing upgrades w/o risking the item.

there is multiple armor merchants, depending on progression in the story the armor rating gets higher. Max is 60-80 depending on your class.
You can just buy a helmet for every attribute and then equip runes. They dont double the stat but you get + 1, +2, or even +3 runes. The helmet gives +1
Also you can easily equip another rune or insignia on top of the other due to most of them being cheap. But then again the armor is also quite cheap.
Also as mentioned the perfect salvage kit lets you salvage the rune/insignia, but sometimes the kit is more expensive than buying another rune.
You will figure it out.
I would not suggest getting more helmets in pre, bc the first town in post has better armor ratings then pre
